
Chicken & Vegetable Pasta Alfredo
This is just my way of making something great and easy.
6 oz or more of sliced chicken
1 large zucchini
1 large yellow squash
12 or more grape/cherry tomatoes
1 jar favorite Alfredo Sauce
2 green onions, chopped
4-5 stalks asparagus, cut into fourths
1 tbsp garlic, crushed
parsley
Penne Pasta
Saute zucchini, yellow squash, onions, asparagus, and garlic in olive oil (not too much, just coat the pan) on medium heat. (Until vegetables are glossy, but still somewhat crisp)
Heat almost entire jar on medium heat until hot
Cook pasta, usually 1/2 to 3/4 box (I use Barilla)
Drain pasta, add to large bowl, add chicken, vegetables, tomatoes (uncut), alfredo sauce, stir, then sprinkle with parsley and serve.
Andy and I just love this recipe. Tastes fresh and rich! I would definitely make this again!!
