The first time I tried this trick at home I couldn't believe it. I do a lot of cooking and, more times than not, the only time I don't use garlic is when I'm out of garlic. I'm not a big fan of "already peeled" garlic in a jar because it's soaked in water, you don't know how old it is and sometimes it's soaked in acid. Fresh garlic is the way to go but not the most fun to peel unless you know this trick!
